i was in a rush...

i've never thought i could do these, 3 cakes in one day! i went out early at 8am to the garage and started to make my first ever baked-cheese cake after breakfast. whisking the egg white until peak-form was a str
uggle. i gained my arm muscle in an instant (pammy and aunty ying, thanx for helping). it was supposed to be fluffy ,though it still tasted fine. a little bit extra of lemon juice might does wonder for the cake.

it expanded...

and it shrunk...

it wasn't that bad la...
and i made this pecan chewy cake again. it taste perfect of course. but i wonder did i over baked it that there was crack line on the cake?? this is one of the easiest cake to bake. 6 ingredients, mix everything together, bake for 35 minutes at gas mark 4.

this is the pecan cake!

i'll make another next week

lastly, the birthday cake for aunty ying(she shares the same birthday day with my mummy ^^) she doesnt like cheese cake so we wanted to make her something simple and nice. i found this recipe from Nigella Lawson's site and thought it might be a good one. maybe there i missed something out or maybe the apple puree was supposed to be blended with processor. it didnt turn out as what i expected. im not sure if it's a moist cake or maybe i should have baked it longer (i put it back to the oven for another 15 minutes after finding it was damply and clammy) there is no need of flour at all for this cake and i guess this might be the reason why it was so moistly.
apple and almond cake

done!
H-A-ppy birthday!
